LH’s food philosophy is based on seasonal and sustainable cuisine.

Personal Involvement – getting to know our food: where it comes from and who produces it, trying to track every product to its original source. We strive to find unique local shops which give us the opportunity to get a better understanding of the local food culture and find the best way to integrate the produce in our menus.

Wellbeing – our Chefs aim to promote health and nourishment through inspiring menus, preparing the ingredients in a way to protect their nutritional values.

Quality and Freshness – menus will be based on organic produce grown in Japan, with special attention to raising method of those products, when and how are harvested, slaughtered and caught.

Our menu elaboration is specific to each country as we strive to introduce the local cuisine to our guests but also to make an impact on the local farming economy.
